Here’s an easy version of the always popular Protein Pancakes, just in time for Pancake Tuesday (or any other flipping day!). The macro's on this are very tidy indeed 😋
INGREDIENTS (Excluding Toppings)
50g Instant Scottish Oats
30g Pure Whey (Vanilla works best)
1 x tsp Baking Soda
4 Egg Whites
200g Greek Yoghurt
1 x tsp Vanilla Extract
METHOD
1. Combine Oat Flour, Pure Whey and Baking Powder in a mixing bowl.
2. Add Greek Yoghurt, Egg Whites and Vanilla Extract to this and mix again to even consistency.
2. Add 1 tbsp of coconut oil to a flat frying pan on a medium heat. Then pour in your pancake mixture slowly creating one pancake at a time. Cook on both sides for a few mins until golden brown. You should get roughly 6 average sized pancakes.
3. Stack them high and decorate them with whatever toppings you prefer: we love a bit of PB & Cacao Nibs, but maybe Nutella and Strawberries is more up your street.
